The body's own chemical compound L-carnitine (hydroxycarboxylic acid) is involved in fat oxidation, i.e., fat burning, in the muscles. L-carnitine transports the long-chain fatty acids to the mitochondria, the "power plants" of the cells, where they are burned. This function can boost fat burning through increased transport capacity. L-carnitine is found in large quantities in red meat, but less in poultry and very little in vegetarian foods.
